Digital Temperature Controller Thermostat WH9002A

I bought one of these when they were on sale for $16.99 here along with a slow-cooker($9.99 on sale at Sears) to build my own Sous Vide cooker. It works excellently.

Most Sous Vide cookers cost hundreds of dollars, so to be able to build one for twenty seven dollars that works great is a huge savings.

I've now made steak, chicken and salmon using this device, with excellent results.

I've verified that the temperature reading on this unit is accurate using another temperature sensor(although if your unit is not accurate, it does allow recalibration of the sensor).

The only complaint that I'd have is that the temperature doesn't really get fully stable, rather it always goes up and down by about 2 degrees F (the temp set /- 1 degree). This is because it turns on the heating element(slow cooker, in my case) when it reads a temperature 1 degree below the target, and keeps it on until it hits the target temp(which causes it to overshoot by about 1 degree, with my setup). Not a problem for most sous vide cooking, but I've read that some things (like sous vide eggs) may quire very precise temperature control.

Note that to connect this to a normal AC device, like a rice cooker or slow cooker, you will likely need an AC cord that you don't mind cutting apart, some wire strippers, then probably either electrical tape, shrink tubing, or wire nuts.

I just ordered two of these, and on checking the model number listed is for a Celcius 220V unit. Just want to make sure I am getting a Fahrenheit 110V unit.
